Creamy vegan mushroom pasta
- 1 cup raw cashews (no need to soak)
- just over ½ cup boiled water
- 1 container of sautéed cremini mushrooms (save some for toppings)
- ⅓ cup nutritional yeast
- 1 tbsp olive oil
- a handful of parsley
- garlic powder
- salt + pepper to desired taste!
- whole wheat penne
- In a high speed blender, mix all sauce ingredients and serve with cooked whole wheat penne.
